Sturgeon and sturgeon both belong to the category of super-large freshwater giants, with long lifespans, they can grow to hundreds of pounds and even, legend has it, exceed a thousand pounds.

To be more precise, sturgeon belong to the first type of sturgeon, scientifically known as Huso dauricus, an ancient fish species native to the Heilong River in the Northeast.
Unlike the hybridized sturgeons, sturgeon have stricter habitat requirements and are less abundant. Decades ago, in some winter fish markets in the Northeast, there were scenes of sturgeons weighing hundreds of pounds being sold after being cut with saws. Now, in the Heilong River within China, they have become very rare due to overfishing and deteriorating water quality conditions.
